Description
A gelatin extraction process which is simpler and at shorter time than any previously reported for poultry body parts . A process of extraction mainly carried out at ambient temperature. An extraction process that uses less volume of chemicals than previously reported- a greener process due to less fluid discard. A gelatin extraction process from chicken/poultry plurality to produce gelatin of high bloom (360 g) and high purity of superior grade. An extraction process that could also be applied to other poultry animals such as turkeys, geese, ducks, guinea fowls and quails.
