The present invention relates to the bacteriocin and method to purify bacteriocin molecules (BacC1) isolated from Enterococcus faecium C1. Bacteriocin BacC1, comprising acid amino sequence of GPXGPXP (G = glycine, P = proline, X = hydroxyproline), produced by the bacteria strain is useful for inhibiting growth of selected food-spoilage microorganisms and/or food-borne pathogens, hence increasing the shelf life of food products. The bacteria strain of the present invention, Enterococcus faecium C1, demonstrates properties of non- pathogenic, non-haemolytic, non-antibiotic resistant, and may be used as a probiotic bacteria in food products. The method to purify bacteriocin involves precipitating the bacteriocin using ammonium sulfate; separating the precipitate using fraction hydrophobic column; and centrifuging the precipitate. A chromatography separation involving reverse- phase high-performance liquid chromatography (HPLC) is used to further purify the bacteriocin.
