Description

Oil palm industry is one of the pillars of Malaysian economy. The product, palm oil has been used as safe and healthy edible oil, mainly due to the excellent dietary energy source provided and it is cholesterol-free. It is widely consumed as cooking oils and being integrated into food products. One of the issues aroused is repeatedly-used cooking oil especially among hawkers, restaurants and food-chain operator may lead to the degradation of the oil leading to the formation of free radicals which resulted in several kinds of diseases and metabolic disorder. It is a common scenario for consumer to see foodstuff sold being cooked in repeatedly used cooking oil. There is also a concern on the availability of recycled cooking oil being repackaged and sold cheaply in the market. Scientifically, the process of repeatedly-used cooking oil leads to degradation, as well as produces higher level of peroxides and polar compounds (ketones and aldehydes (carbonyls)).
